Sweet Beet Dip

This recipe is a prime example of a happy kitchen accident; that and a seriously sparse pantry.

My lovely parents are visiting my siblings and I for some grocery shopping quality time today, and my empty kitchen I can’t wait to see them. ;) In all seriousness though, this dip is GOOD. It almost makes me wish I had limited food items for often; it tests my creativity.

IMG_1740I’ve never been too good at math, but concocting recipes comes pretty easy to me. My rationale is as follows:

  1. Gather available items
  2. Determine what might go well together
  3. Add items together using desired kitchen appliance
  4. Eat and hope it tastes good

  1. I LOVE beet hummus! But with cranberries and OJ?!!! You are an absolute genious! I love creativity that stems from “limitations” – they seem to opens up a whole new world of possibilities that oterwise get overlooked :)

  2. I love the idea of adding cranberries! So smart!

That is definitely one of my favourite things (restocking my kitchen) when my parents visit…. I mean… ;)
