Thick and Rich Vegan Avocado Hot Chocolate

Was your weekend epic? Mine sure was! Saturday was Kingston’s turn to welcome Santa to town. Liz and I headed downtown to ring him in on the absolutely most frigid of evenings; how festive!

Suzanne and Liz Yesterday the parents ever so graciously came to visit. Call me 5 years old, but I really miss my parents! Our short time together was well spent grocery shopping at Farm Boy (who knew Kingston had such a Whole Food-esque shopping experience?), lunching at Thai House, and exploring the town on foot.

Thick and Rich Vegan Avocado Hot Chocolate I could have really used a mug full of this hot chocolate while out and about this weekend; Kingston is mighty cold these days! The avocado makes this beverage a truly nourishing treat; I was surprised by how full it kept me when I first made it!

Thick and Rich Vegan Avocado Hot Chocolate

Ingredients (2 large mug fulls)

  • 1 c. unsweetened almond milk
  • 1 c. 1/4 water
  • 1/2 c. ripe avocado flesh (1 small avocado)
  • 2 1/2 tbsp. cocoa powder
  • 2 tbsp. maple syrup (less if your non-dairy milk is sweetened)
  • optional: 1 tsp. maca powder, 1/2 tsp peppermint oil

Instructions

Blend all the ingredients in a high speed blender until smooth.

Transfer to a saucepot and simmer on low until warm, or transfer to mugs and reheat in the microwave for 20-35 seconds.

Top with vegan marshmallows and feel the warmth!

  7. Love this idea!!! I would go make this right now… except the avocado I cut into last night was way too unripe. Any tips for ripening up an avocado AFTER it’s already cut open? :P
