Blueberry Ginger Hemp Protein Bars

Man, do I have a questionable looking yet delicious recipe for you today.

Blueberry Ginger Hemp Protein Bars 2 As I mentioned during Tea Time on Sunday, I have officially registered for my first half-marathon! As I was needlessly reminded by my Italian mother, my nutritional needs will no doubt be greater as I train for this race. Having a quick and easy snack to grab before or after a run is crucial for providing energy and rebuilding muscle; I do want to cross that finish line, after all!

As it turns out, hemp protein has a characteristic green tinge to it; that’s not to mean is doesn’t taste delicious! I married ginger and blueberries for an unreal flavour combination, but feel free to switch it up with your favourite dried fruit and spices.

Blueberry Ginger Hemp Protein Bars

Prep Time: 15 minutes

Ingredients (6 large bars)

  • 1 c. oat flour (store bought or ground in the food processor)
  • 1/2 c. North Coast Naturals Hemp Protein
  • 1/4 c. millet/quinoa
  • 1/4 c. + 2 tbsp. brown rice syrup
  • 1/2 c. almond butter
  • 2 tsp ground ginger
  • 1/2 c. dried blueberries


Heat a frying pan to high heat, and add quinoa/millet. Roll around grains in pan for 5-7 minutes to toast them, being careful to prevent burning.

Combine flour, protein, millet/quinoa, dried blueberries, and ginger in a large mixing bowl.

Add brown rice syrup, and almond butter, and mix with hands until well combined. If the mixture is a bit too dry, add another tbsp of almond butter or brown rice syrup.

Press down into a baking dish and refrigerate for a few hours before cutting into bars/squares. Store in an airtight container in the fridge.

      Yeah they are SUPER pricey; thank goodness for costco!!

  2. Mmmm these sound delicious! They don’t look so bad – especially the 2nd pic (quite pretty!). I need to get some dried blueberries!
    Love that you’re training for a half marathon. I’ve done a few now (well… maybe more than a few haha ;p) and really like them. I told myself last year would be my last year, but I think I want to do one more this year!

    Maybe this makes me weird but I sort of love the colour hemp, especially hemp protein gives things. Apparently I love the way dirt looks ;)
