Minted Moroccan Mango Chickpeas

Do you ever have those moments of ‘food envy’? You’re waiting in a busy restaurant for someone to take your order, meanwhile, the waiter brings your table neighbour a bit plate of something delicious. *grumble* Or maybe you’re sitting down with friends on your lunch break, and as you unwrap your PB&J for the fourth time this week, your pal unpacks an elaborate looking dish. *drool* This recipe is a product of those moments of food envy.

Minted Moroccan Mango Chickpeas A friend of mine unpacked a delicious looking chickpea dish during the lunch hour of my yoga teacher training. She directed me to the source of the recipe, but I tweaked it majorly to suit my tastes! The first time around (when I took the pictures) the ingenious idea of adding mango hadn’t yet graced my brain; thank goodness for culinary epiphanies :P

Minted Moroccan Mango Chickpeas

Prep Time: 10 minutes

Cook Time: 1 hour

Ingredients (6-8 servings)

  • 2 tbsp. olive oil
  • 2 c. onion, diced
  • 2 cloves of garlic, minced
  • 3 tsp. paprika
  • 1 tsp. dried chiles
  • 2 tsp. cumin
  • 2 tsp. cinnamon
  • 2 c. carrots, diced
  • 1 can no salt added diced tomatoes (with juice)
  • 1 can tomato paste
  • 2 c. vegetable broth (low sodium)
  • 2- 15 oz. cans of chickpeas (or approx. 3 cups cooked from dried)
  • 1 c. parsley, chopped
  • 1/4 c. mint, chopped
  • 1 large ripe mango, diced

Instructions

In a large pot, heat oil to medium-high heat and add garlic and onion to soften for 3-5 minutes.

Add spices and cook for another 2 minutes.

Add carrot, tomatoes and paste, chickpeas, mango and broth.

When boiling, reduce to a simmer and cook down for 45 minutes to an hour (or until desired consistency).

Stir in herbs last, and serve over grain of choice.

Slow cooker option

Place everything but the herbs in a slow cooker, stir, and cook on high for 4-6 hours. Stir in herbs when cooked completely.

    I always get food envy whenever I see people eating really delicious foods that contain peanuts/peanut butter haha.

  2. I get food envy almost daily. Not that I don’t eat good food but cooking for 1 means you have a lot of leftovers and repeat meals. Ugh

  7. Oh yes, I’ve had all kinds of moments of food envy when dining or taking an order! I’m not a huge fan of mango in my savory dishes – but I love mango & sticky rice together! But the other ingredients in the stew sound lovely – love parsley, mint and chickpeas! I would add loads of harissa, too for an authentic Moroccan flavor!
