This week we launch our new interview series, Healthy Vegan Profiles! What better way to get one another than to share some yummy food and talk about ourselves a bit? I’m really not that surprised that Gabby’s submission earned top billing this week. Chocolate and no-bake? I’m in!
Amy’s cookie recipe will satisfy any vegan, paleo-eater, or observer of Passover (as well as everyone else)!

Our inaugural interview is with Janet of thetastespace! I have been a reader of Janet’s for quite some time, and know she has always been present in the HVF community. Let’s hear what she has to say:
1. Your name, blog name and URL, and one little-known fact about you.
Janet, creator of The Taste Space . Like most, blogging is my hobby but most may not know that I am a physician by day.
2. What is your favourite vegan recipe?
Dal bhat: it combines simple with delicious. It is our favourite and most often repeated meal.
3. What is your favourite vegan ingredient or vegan cooking substitution?
Dark chocolate. It is a common question I get: is chocolate vegan? YES (provided it doesn’t have milk added)!
4. Who inspires you most, and why?
My partner-in-crime (and common-law marriage), Rob, is a constant source of inspiration and amusement. His unwavering support encourages me to keep trying new things.
