Catelli Gluten Free Pasta [Giveaway] + Lemon-Dill Hummus Summer Pasta Salad

Good day friends! It seems like there is so much going on these days. With travelling to Toronto for the past two weekends, celebrating graduations, and making it through last Friday (did anyone else feel a bit loopy?) I feel a bit all over the place. It’s comforting to sit down and reconnect with something I love doing so much; sharing with you!

Last month I was invited to attend a cooking demonstration hosted by Catelli to mark the launch of their new gluten-free macaroni pasta. Although I couldn’t attend in person, the magic of the internet allowed me to web-conference into the cooking demonstration at George Brown College where Chef Higgins shared his tips and tricks for pasta perfection!

Catelli Gluten-free Pasta: How to Cook Pasta

Catelli has recently added Macaroni noodles to it’s line of gluten-free pastas. The pasta is made of a blend of quinoa, corn, brown rice, and white rice, and I can attest that it beats just about every gluten-free pasta I’ve tried to date! The line also includes Spaghetti, Penne, and Fusilli (my personal favourite)!

One of the downsides of attending the demonstration by web was that I didn’t have the chance to try the delicious dishes that were being concocted. There is a slew of recipes on the Catelli website such as Ginger Edamame Macaroni Salad. Of course I wanted to get in on the recipe creating myself, so I am sharing  a new recipe that is picnic perfect and gluten-free-friendly!

Lemon-Dill Hummus Summer Pasta Salad

Prep Time: 15 minutes

Cook Time: 5 mintues

Ingredients (8 servings)

  • 1/2 box Catelli Gluten-free Macaroni
  • 1 carton cherry tomatoes, quartered
  • 1 c. chopped greens (I used kale leaves and broccoli slaw)
  • 1/4 c. hemp seeds
  • 1/4 c. pumpkin seeds


  • 1/2 c. hummus
  • 1 1/2 lemons, juiced
  • 2 tbsp olive oil
  • 2 tbsp dill, dried or fresh
  • 2 cloves or garlic, minced


Cook pasta according to package directions. Drain and transfer to a cookie sheet to cool.

Prepare dressing by mixing ingredients together by hand or using a small food processor.

Chop greens and tomatoes. Place in a large mixing bowl with pasta and dressing. Mix to combine,

Serve chilled or at room temperature.
